Our Alexiou Company was founded in 1998 by Lampros Alexiou.

Preheat the oven to 200ºC.
Put water and yeast in the mixer bowl and stir with a spoon until the yeast dissolves. Let the yeast expand for 5-6 minutes.
Add the rest of the ingredients (bread flour, all-purpose flour, sugar and salt) in the mixer bowl and mix them using the hook on medium-high speed for 7-8 minutes until they become a smooth malleable dough that can be easily handled. It is ready when it starts coming off the bottom of the bowl.
Apply some oil on the interior of a bowl, transfer the dough to it, cover it with plastic wrap and let it rest for about 30 minutes to one hour and a half until it doubles in size.
Fill a bowl with 500mL of water and add sugar in it. Stir until it dissolves. Fill another bowl with sesame.
Form balls of dough. Knead each ball to give it the shape of a sausage and join its ends to form a circle. Make sure that all bagels have the same diameter. Dunk each bagel in the bowl with sugary water and then in the bowl with sesame.
Place the bagels on an ovendish (35×40) with baking paper laid out and bake them for 15-20 minutes until they become golden brown.
We suggest serving them with spread butter while they are still hot and put some blue cheese or feta cheese and grapes pickles on the side!
